What you will need

100g softened butter 100g caster sugar 2 large eggs 100g self-raising flour ½ tsp vanilla extract



  1. 1. Preheat the oven to 200°C or Gas Mark 6
  2. 2. Beat the butter and sugar together in a bowl until light fluffy
  3. 3. Continue to gently beat whilst adding the eggs one at a time
  4. 4. Add the vanilla extract into the mixture
  5. 5. Fold in the flour whilst continuing to beat
  6. 6. Evenly distribute the mixture into 12 cupcake cases
  7. 7. Place in the oven and bake for 15 minutes
