What you will need
100g softened butter 100g caster sugar 2 large eggs 100g self-raising flour ½ tsp vanilla extract
Method
- 1. Preheat the oven to 200°C or Gas Mark 6
- 2. Beat the butter and sugar together in a bowl until light fluffy
- 3. Continue to gently beat whilst adding the eggs one at a time
- 4. Add the vanilla extract into the mixture
- 5. Fold in the flour whilst continuing to beat
- 6. Evenly distribute the mixture into 12 cupcake cases
- 7. Place in the oven and bake for 15 minutes
